Bre’s Vegan Cheese Sauce

It’s hard for me to remember back when I ate meat. 8ish years ago! I could never imagine going back.
Once I became a vegetarian, my whole diet had to change. I had to force myself to eat healthy. Now, the thought of eating all that crappy food makes my stomach turn.

Ok..

I have to be honest here.

I DO still CRAVE some of that crappy food. That is why when I find a vegan version I LOSE IT.

One of those things are Little Debbie cakes. Sadly, I have never found a replacement..

Another one is nacho cheese.

I am here to tell you, I have a kick booty replacement.

When I first went vegetarian/healthy I was living in the downstairs apartment of the most lovely vegan woman anyone could ever meet. Breanne Fariss. She cooked for me. She shared recipes. She is literally the reason I was able to stick with it.

It was she who gave me this amazing recipe.

So sauce-y

So rich

It really is the best.

You can do so many things with it too! Broccoli cheese soup, mac and cheese, nachos, the list goes on. All you need to do is add more or less water.

Guys. You have to try it.

Bre's Vegan Cheese Sauce
 ¼ cup Earth Balance Vegan Butter
 2 tsp Garlic Powder
 2 tsp Onion Powder
 1 tsp Turmeric
 1 tsp Mustard Powder
 1 tsp Paprika
 3 tbsp Corn Starch (Or flour)
 1 qt Water (less or more depending on what your making)
 Nutritional Yeast
 Vegan Cheese (Optional)
 Salt and Peper to taste

Melt butter in a sauce pan.

Once melted add spices. Stir quickly! You don't want them to burn. After they're mixed in, add corn starch. Add a little water at a time to get out the clumps. (I like to keep a quart of water beside me ready for action.)

Continue adding water until you get the consistency you want.

Add nutritional yeast and a handful of vegan cheese. (If I am doing nachos I use Daiya pepper jack.. yummm..)

Add more water (if needed) and salt and pepper to taste.
